2. Rows and columns
The first control is a pair of drop-downs that read as a sentence: Customer by Period. The left one decides the rows, the right one the columns.

The category entries use your own names — Customer – Region, Product – Brand — for whichever category columns your business has named on the Categories page. Grouping by a category turns a list of hundreds of customers into a handful of regions.

Why some column choices disappear
A report cannot put customers against customers. Pick Customer (or any customer category) for the rows and every customer option drops out of the column list; the same happens for products and salesmen. Period is always available as the columns.
